
Well I’m the king of the Stilton’s, oh the cheesy VIP…

Now as your all settling down to a breakfast consisting of chocolate easter eggs I’m going to talk to you about Colston Bassett Stilton, the most fabulous tasting Stilton in the land and is only one of six Stilton producers. It has a buttery flavour and a blue edge that is so well balanced it just melts in the mouth for a perfect stilton flavour and certainly isn’t a cheese to turn your nose up to. It has a creaminess not found in other Stiltons which could be down to the fact that is still hand made ever since 1913. They take time over the production and have only had four cheese makers (Currently Billy Kevan) in a hundred years which means all the traditions and subtleties in making have continued and can be tasted through the cheese. The perfect Stilton from Colston Bassett is found in a rich creamy colour with blue veining spread throughout and is best eaten at around 12 weeks but this varies from cheese to cheese as they have their own characters. Serving as a tasty addition to a summer salad, enjoyed with sweet dishes such as chocolate and ginger or for an even more luxurious edge serve with champagne to let the bubbles cut through the creaminess for a heightened taste sensation. I would suggest a slice of Colston and a nice cheese biscuit with some grapes is the simplest of pleasures but you won’t be disappointed.
