New cheese alert! Cornish cider bathed Russet Squire from Curds & Croust

Good Afternoon Cheesy1’s,

Wow, it certainly feels like a long time since an actual cheese related post instead of updates about websites etc. It has been a whirlwind of a few months but I’m excited to bring you a new cheese from Curds & Croust a Cornish soft cheese maker. “Curds and Croust is a sister company to Rodda’s. So when I scrolled through the Cheesy1 Twitter feed and saw this post below I just had to jump at the opportunity.

After a short time I was contacted by Becky from Curds & Croust and she said some lovely cheese was been whisked my way, and what a lovely cheese it is too. The cheese has been tested over the last year at various shows with great praise but is to be launched this week at Expowest Cornwall. With cheese in hand this is where the cheesy fun really begins.

Now I don’t know if you have seen but we may have had a little snow in the last few weeks and the temperatures plummeted, it was perfect weather for a Macaroni cheese.

Featuring Waitrose macaroni, a whole Russet Squire (With Rind) and a good helping of Wookey Hole Cheddar for a strength & golden crust. It was simply delicious! The Russet Squire flavour came through but if you don’t add the rind you won’t experience the fullest flavour. It has a delicate pungency that if it was paired with a stronger cheddar in the mac or a Parmigiano for a topping it’s flavour may get lost. The recipe will be available soon on the Curds & Croust website.

But what is the cheese like on its on?

In a word; indulgent. If you judged this cheese by it’s smell and sticky rind you would think that it would hit you with a strong cider flavour. When you taste it though it is accessible to all because it has the right balance of flavours. It isn’t one way or the other, it tracks a perfect middle road for a washed rind cheese. I have a Judged a washed rind category at a cheese awards and the Russet Squire is a refreshing take on this style of cheese because it is bathed in Cornish Cider – often seven or eight times to get that unmistakable russet look to its soft washed rind. The biggest test this cheese faced though was letting my Mum try it because a cheese can either pass or fail very quickly at this stage; I’m pleased to say it passed!

You can see in the photo above the paste forming in the cheese and you can imagine the squidgy goodness that it has to offer. It worked brilliantly with sweet fruits & nuts on a cheese board. It may be tricky to get hold of some at first but once it gets out into the cheese world pick some up for a cheese with a difference, you can use this interactive map to see where it is available near you. It just leaves me to thank Becky at Curds & Croust for allowing me to try this cheese and I wish them every success with the launch of their new cheese.
